There are so many recipes for canning pickles, but a friend of mine was always a really great cook and always looked forward to finding different types of recipes for making things from scratch to save money, and this included ones for making things such as pickles. She had us over one time for a meal and along with all the other home-made goodies she served, she put out a dish of her homemade “solar pickles,” as she called them. I figured she must have put forth a lot of hard work in canning pickles, but she assured me it wasn’t any big deal. And of course after tasting them and hearing my husband rave about how much he loved them too, I had to get the recipe from her.

So here is some information on this friend’s way of making those “solar pickles” I think you are sure to enjoy as much as we did. Now, these are similar to the ones that are advertised as “delicatessen-style,” those higher priced ones that have gone through the roof price-wise.  When mentioning anything about canning pickles, most people assume that it’s going to be a lot of work as I did, thinking it would be similar to the old-fashioned way of having to get a brine ready and then to use either an open pot method or pressure canner for canning pickles. This is a recipe that you can make during those hot summer months without having to heat up the kitchen any more than might already be the case. When canning pickles are coming in from our garden we’re usually having lots of hot, sunny days, so working up a sweat in doing any canning is not something I would look forward to by any means.

This recipe does call for regular canning pickles, though, as one of its key ingredients but I have also used cucumbers right from the garden in making this recipe. Using the latter works out fine also. Another key is, along with canning pickles or fresh cucumbers, a person should also have the right spices to add to the gallon jar that is called for.  Fresh dill and garlic work the best, although dried dill and the garlic that is already chopped and sold in jars is okay to use.  The canning pickles get a more intense flavor using the fresh seasonings. And the recipe also calls for hot peppers “to taste.” For those I use dried hot peppers that I run through my spice grinder a bit to chop them up.
I guess you could say the hardest part about making these “solar pickles” is waiting for them to get ready. They have to sit in their clear gallon jar in the full sun for a whole day. A whole day! But it’s well worth the wait., trust me.  And with the price of those better delicatessen-style pickles anymore, these are much less expensive. We have used twelve or even more of the canning pickles in a gallon jar, depending on the size of the pickles. Garden cucumbers can be sliced either horizontally or vertically, it’s up to your preference. When the canning pickles are done basking in the sun in their jar, they can then be stored in the refrigerator for a few weeks. (If they last that long.) Either using canning pickles or sliced fresh cucumbers, whichever you choose, you will no doubt love the pickles as much as we do and quickly want to refill that jar to have more on hand!
