Canning Pickles

Canning Pickles

There are so many recipes for canning pickles, but a friend of mine was always a really great cook and always looked forward to finding different types of recipes for making things from scratch to save money, and this included ones for making things such as pickles.  She had us over one time for a meal and along with all the other home-made goodies she served, she put out a dish of her homemade “solar pickles,” as she called them.  I figured she must have put forth a lot of hard work in canning pickles, but she assured me it wasn’t any big deal.  And of course after tasting them and hearing my husband rave about how much he loved them too, I had to get the recipe from her.

Canning Pickles

So here is some information on this friend’s way of making those “solar pickles” I think you are sure to enjoy as much as we did.  Now, these are similar to the ones that are advertised as “delicatessen-style,” those higher priced ones that have gone through the roof price-wise.   When mentioning anything about canning pickles, most people assume that it’s going to be a lot of work as I did, thinking it would be similar to the old-fashioned way of having to get a brine ready and then to use either an open pot method or pressure canner for canning pickles. This is a recipe that you can make during those hot summer months without having to heat up the kitchen any more than might already be the case.  When canning pickles are coming in from our garden we’re usually having lots of hot, sunny days, so working up a sweat in doing any canning is not something I would look forward to by any means.

Dill Pickle Recipes

Canning Pickles

This recipe does call for regular canning pickles, though, as one of its key ingredients but I have also used cucumbers right from the garden in making this recipe.  Using the latter works out fine also.  Another key is, along with canning pickles or fresh cucumbers, a person should also have the right spices to add to the gallon jar that is called for.   Fresh dill and garlic work the best, although dried dill and the garlic that is already chopped and sold in jars is okay to use.   The canning pickles get a more intense flavor using the fresh seasonings.  And the recipe also calls for hot peppers “to taste.”  For those I use dried hot peppers that I run through my spice grinder a bit to chop them up.

I guess you could say the hardest part about making these “solar pickles” is waiting for them to get ready.  They have to sit in their clear gallon jar in the full sun for a whole day.  A whole day!  But it’s well worth the wait., trust me.   And with the price of those better delicatessen-style pickles anymore, these are much less expensive.  We have used twelve or even more of the canning pickles in a gallon jar, depending on the size of the pickles.  Garden cucumbers can be sliced either horizontally or vertically, it’s up to your preference.  When the canning pickles are done basking in the sun in their jar, they can then be stored in the refrigerator for a few weeks.  (If they last that long.)  Either using canning pickles or sliced fresh cucumbers, whichever you choose, you will no doubt love the pickles as much as we do and quickly want to refill that jar to have more on hand!

Canning Made Easy With Personal Advice From A Home Canner

Thankfully there is a growing interest in the art of preserving produce. Whereas at present’s busy schedules do not go away a lot time for old style pickling, refrigerator pickling is an easy option to seize summer season in a jar. Perhaps you already have these pieces of equipment in your kitchen and have not yet employed them in your canning regime. Anybody can do it and no special tools is needed.

Pressure canning is used for low-acid foods like vegetables. Merely place uncooked, recent greens into sterile jars. These lids may not seal correctly and allow for food spoilage. * Allow filled jars to chill before putting in refrigerator. Prepare a mix of vinegar, sugar, salt and spices and bring to a boil. As usual, I believe if you follow the guidelines which come with your steam canner, you should enjoy great results.

Processing time varies based on the food and container or jar size. Fagor pressure cookers are one of the three types of pressure canners specified by the USDA and the NCHFP. Consumers, on the other hand, are not fully aware of chemicals used in raising crops and produce and food canning which are available in the supermarket. Fagor pressure cookers are one of the three types of pressure canners specified by the USDA and the NCHFP. It requires a temperature of 240 degrees Fahrenheit for the bacteria to be killed. The Importance of the Right Jars and Lids It is important to only use jars purchased for canning.

The canner’s nonporous enamel exterior washes very easily.  With this kit, Ball Canning supplies you with all of the tools you will need for home canning and preserving; simply add ingredients! The manufacturer recommends handwashing for the canner, magnetic lid lifter, jar lifter, and rack. Not having essential equipment can cause the jars to fall over during the canning process and get water in them. These low-acid foods need to be brought to a temperature of 240 to 250 degrees Fahrenheit for the time specified in the recipe.

They advise that recipe books written prior to 1989, the year the USDA updated their guidelines, should not be used. They recommend the Ball Blue Book of Preserving and the USDA’s Complete Guide to Home Canning for the most reliable information. For me the most dreaded canning process was handling the corn. Cook ten minutes.  The chrome-plated rack features sides that prevent jars from slipping and a handle for effortless lifting. Mixed with mustard powder, ground pepper, crushed ginger, garlic and vinegar, these items are seasoned in a clay potKorean kimchi. On the wooden chopping board, I would slice the kernels from the cob to dry on cookie sheets placed in the sunshine. In Mexico, chile peppers, particularly of the Jalapeo and serrano varieties, pickled with onions, carrots and herbs form common condiments.

Those pickles looked so tempting, I couldn’t wait to get the lid off the bottle. Pickled eggs are common in the Upper Peninsula of Michigan. Harvest your cucumbers early in the morning and pickle them within 24 hours. In the Philippines, achara is primarily made out of green papaya, carrots, and shallots, with cloves of garlic and vinegar. As the bottle came off the self, my mouth started to water.

With the Nesco 700-Watt Food Dehydrator you’ve an excellent way of storing those veggies you planted in the spring and be able to appreciate your personal home-grown organic produce all year long. They’re particularly great in winter soups and stews where they simmer in the crock pot all day. Let stand overnight before putting into jars. Boil ten minutes stirring constantly. Add 4 cups sugar and 4 cups strawberries.

Has there been a time where you were eating in a restaurant and were curious just how the food got prepared? You may have wondered if it would be possible to create this dish at home. Follow these tips to learn the secrets of fine cooking. Cooking is an enjoyable hobby in which anyone can participate.

Shake things up if your family is tired of seeing the same old frozen corn on the table at dinner each night. Mixing new ingredients into the corn, like coconut for a Thai flavor, will give them an interesting treat.

Even though leafy greens are healthy, they are hard to cook. Having to remove the stems can be a very tedious job. However, a simple tip is to take the leaf and fold it in half along the stem, you can then easily take the stem out of the middle. You can use a knife as well to trim the stem from the folded leaf. Either way you do it, when the leaf is unfolded, you are left with a green with no stem.

Fruit works fabulously on a grill. Slice up nectarines, melons and peaches and then thread them onto a skewer. Cook them on a cleaned grill until you see the grill marks. Place atop grilled pound cake or on ice cream to serve.

When cutting fresh herbs, sprinkle salt onto the cutting board. This adds flavor to the herbs and helps to keep them from sliding off the cutting board. If you add the salt to your cutting board, reduce the salt in the recipe by the same amount, so that you don’t add too much salt to your dish. The salt that is added to your dish with the herbs will provide enough flavor.

Try different liquids in recipes calling for water or milk to add some new flavors to your meals. Broth is a great substitute for water, and milk adds delicious flavor and extra nutrition to soups and stews. Instead of milk, try sour cream, yogurt or buttermilk. Using different liquids can add nutritional content to certain dishes and improve their flavor.

Keep spices in a dark and cool place. Storing them out in the light and heat will cause them to lose some of their shelf life. Try to find a cool, dark cupboard if you want to increase the flavor and lifespan of your favorite spices. Using fresh spices will make your food taste better.

You’re now on the way to becoming a great home chef. Use your creativity to create fabulous meals and memorable new recipes. There are so many interesting cultural foods to try out, so get out there and experience the variety!
